Brasserie Prince

The Balmoral in Edinburgh was the first of 11 luxury destinations in the Rocco Forte Hotels collection. The hotels, run as a family business, place a central focus on cuisine. The Balmoral is home to the Michelin starred Number One restaurant and for their next venture, Rocco Forte collaborated with another family team, Chefs Michel and Alain Roux to deliver a dining experience with a French twist, The Brasserie Prince.

Gratte Brothers was instructed to strip out the existing kitchen, design, supply and install a new split level catering facility, with the pastry prep area in the basement, main kitchen on the ground floor and a restaurant facing Show Kitchen with a fabricated meat hanging display.

This extensive installation was phased over 3 weeks. Prior to attending site all sourced equipment was collated at our distribution centre to arrive as a single consignment in Edinburgh. The equipment list included Rational Combi-Ovens, Adande Under Cabinet refrigeration, Adventys induction hobs Valentine Fryers and Frima Units. Arriving from some 400 miles away, parking and delivery times in the City centre were specific and therefore a slick unloading operation was required including the removal of doors to meet the programme.

At key stages of the project Senior Project Managers travelled from Head Office to oversee the works, these included the installation of fabricated sections of canopy requiring the use of hot works – within the historic setting of The Balmoral. This prestigious project has been selected by Gratte Brothers as their entry for the CEDA Awards 2018.
