The Balmoral in Edinburgh was the first of 11 luxury destinations in the Rocco Forte Hotels collection. The hotels, run as a family business, place a central focus on cuisine. The Balmoral is home to the Michelin starred Number One restaurant and for their next venture, Rocco Forte collaborated with another family team, Chefs Michel and Alain Roux to deliver a dining experience with a French twist, The Brasserie Prince.
Gratte Brothers was instructed to strip out the existing kitchen, design, supply and install a new split level catering facility, with the pastry prep area in the basement, main kitchen on the ground floor and a restaurant facing Show Kitchen with a fabricated meat hanging display.
