The newly installed butchery area will act to meet the demand of hotel restaurant, Charlie’s at Brown’s, by increasing output capacity and providing the chefs with a comfortable working space. It also works to increase efficiency for keeping meat products separate to further reduce risk of cross-contamination. The installations within the butchery area included a sliding door for space-saving access and a vision window.

Within the new bakery area, our team stripped out an existing cold-room and replaced it with a temperature-controlled chocolate room to meet the increasing demand for the desserts and afternoon teas at Charlie’s and The Drawing Room. Working within a 200+ year old building presented unique challenges, predominantly regarding access and available space. Our team managed to install the UNOX 10-tray Bakertop Plus and prover within the bakery area with only 4mm space either side.
