Brown’s Hotel is not only London’s first hotel but also one of its most illustrious. Opening its doors in 1847, it’s hosted esteemed guests from royals to presidents and is today owned by Rocco Forte. One of 14 of the Group’s highly individual hotels, the 5-star Mayfair destination offers fine dining, world-class facilities and the highest level of service.
Gratte Brothers Foodservice Solutions was appointed to undertake a turnkey catering facility project that included a full strip-out of equipment, walls, floors and ceilings, in addition to mechanical and electrical services and the installation of two new kitchens.
The downstairs kitchen operates as the hotel’s ‘mise en place’, inclusive of catering through the night for room service. The main pot wash area was moved from a separate room to be consolidated within the main kitchen space, whilst a further kitchen was installed on the first floor to cater for the meetings and events held in the lavish upstairs function rooms.
Installing a kitchen in a busy London hotel comes with its challenges. Access to transport equipment in and out of the site was via a narrow staircase and all goods had to delivered between 11:30pm and 6am to avoid disruption to the hotel guests.
